Thailand 2017: Food!

Food in Thailand is definitely a little different, but as long as it wasn't spicy I enjoyed it. Here's a small peek into what I ate there...sorry I don't have as many pictures as I'd like, but I will include some links to pictures online.

Fruits

I got to try many new fruits in Thailand, and they were probably my favorite new things I tried. For instance, on my post about the hotel, I already included a picture of one of my breakfast plates. However, I'm going to include a part of it again that is of my favorite new fruit: passion fruit.

Passion Fruit - yummy!
Some other new fruits that I learned about or tried were dragon fruit, rambutan, longkong, longan, and durian. The dragon fruit was delicious and was like a kiwi but better, I didn't try durian because I heard mostly poor reviews from those who did try it (Miranda smelled it on her hands for two days), and the other three were all good.

Durian - it smells a bit like puke but it supposedly tastes good...a lot of the team disagreed on that!
 Main Meals

The fist meal I had at ZOE was Pad Thai, which was quite tasty. Other meals at ZOE were either a rice or noodle base with some sort of veggies and meat or broth that you put with it. Some of the stuff that you were to add to the rice/noodles was too spicy for my very Lancaster County taste buds, so I had Miranda taste test it first and if she said it was spicy, I just ate the rice. Another  meal that I learned the name of was Khao soi, which was noodles in a bowl that had broth and a chicken leg in it. It was a little too spicy for me, so I didn't eat a whole lot of it (the chicken was really good, though). Betsy, our team leader, said that it's not usually that spicy.

The one evening we ate at the restaurant at Horizon, and I ordered fried rice with chicken. It also came with a fried egg, which I am not a fan of (I prefer my eggs scrambled or in an omelet, thank you), but Josh, who was sitting at our table, loves fried eggs, so I gave mine to him...from then on, every time any of our meals included a fried egg, I immediately gave it to him and his wife Becca termed us "egg buddies."

We also ate at the Orchid Restaurant, which was a buffet, and here is what my plate looked like:

It included fried rice, some veggies, Pad Thai, french fries, spring rolls, and a fried banana. I also got a watermelon shake with that meal, which was straight up watermelon and crushed ice and was so amazing and refreshing.

Other Foods

Four people on the team had a birthday while we were there (ZOE never forgot one of them!) and on Jason's birthday he got an ice cream cake and he generously shared a slice with each of us.

When we went to Big C for lunch after visiting the Day Market, I wasn't all that hungry because I had eaten some food there so I got an iced coffee and a roti, which is kind of a mix between a crepe and pancake except that it's rectangular and cut into small pieces. Mine was drizzled with chocolate...so yummy!!

Yummy roti!
Lastly, some of us were craving pizza towards the end of the trip, so for our second meal at the Night Bazaar, Miranda, Jenna and I went to Duke's for some pizza! Extra cheese, umm!

Guatemala 2018: Dirt Roads and 200 Cheeseburgers

It was a flawless blue-sky day as we drove out to Yalu once again, over two very bad dirt roads as we got closer to the village. Back at the school there for the third year, seeing the walls that we painted two different shades of blue two years ago, the youth did their skit once again. The kids really enjoyed doing Allelu Allelu with us, especially when they realized they should be trying to out-sing (yell!) the other half when it was their turn! Then, we played a crazy game of Sharks and Minnows with hundreds of excited children!! It was a crazy wave of little Guatemalans swarming us Americans. The kids watching the skit To shorten a long story, we had gotten a very late start in the morning and didn't have time to actually do physical labor for them, but we did see the location of where we at least left the supplies we had brought to build a chicken coop. It was a tiny little area where a family lives up along a hillside. It was the wife's idea to raise chic...

California 2018: Open Heavens and San Francisco

Seven years of waiting. Seven years...and I finally was on my way to California. More specifically, I was finally going out to a Bethel conference in Redding, CA, by way of San Francisco. Along with my friend Miranda, we were ready for our short four-day adventure October 3-6. I couldn't believe that I could get to Guatemala faster then I could California. Seriously, what is up with that? (At least the way home was a 1/2 hour shorter than the US-Guate flight.) We arrived at San Francisco airport, got our rental car (a much fancier one than either of us owns ourselves), and set the GPS for La Quinta Inn and Suites, Redding, and started driving. The landscape along the highway fascinated me. Such dry, golden-brown hills with dark green trees that stood out like little black dots from a distance and looked out of place up close. When we got to a stretch of very flat land for a good hundred miles at least, varying between dusty dry grass and some sort of tree farms (were they al...
